This banana chocolate chip oatmeal baked cake is a great, healthy breakfast or snack alternative. This recipe can be ate right away, stored in the fridge or even in the freezer for later use. High in protein and fiber and easy on the taste buds, this will be one you make on the regular.

 4 overripe bananas (essential that they are overripe) mashed
 2 eggs
 2 cups milk
 ½ cup packed brown sugar
 1 ½ tsp baking powder
 1 ½ tsp vanilla extract
 2 tsp cinnamon
 4 cups large flaked rolled oats
 1 cup chocolate chips (I use Ghirardelli)

Preheat oven to 350 degrees and spray or line 2 muffin pans with liners -- I highly recommend using silicone muffin liners as they come out easily and are helping to save our planet.

In a large bowl, combine bananas, eggs, milk and brown sugar with a whisk until smooth.

Add baking powder, vanilla, and cinnamon and whisk until smooth.

Stir in oats and chocolate chips.

Fill muffin cups ¾ full and bake for 25-30 minutes until golden brown on top. Serve warm (alone or with milk) or cool completely to store: in the refrigerator for up to 1 week or in the freezer for 3-6 months.
