These bok choy burritos are a healthy alternative to your usual burrito. Easy to make and a great addition to your spread for any party.

Yields2 Servings

 1 tsp olive oil
 1 lb ground beef
 1 yellow onion
 4 bok choy leaves with the white ends cut off and chopped up
 1 pt cherry tomatoes, cut in half
 1 cup black beans
 ¼ cup basil garlic pesto

Heat a skillet to medium and add 1 tsp olive oil. Brown the beef and onion, crumbling up while cooking.

Drain off any excess grease and return to the pan. Add the cut up bok choy, tomatoes, beans, and basil garlic pesto.

Cook until heated through. Serve by pouring 1/4 of the mixture onto each leaf of bok choy and roll up.
