A honey dijon walnut salmon that will have you craving salmon more often, but no longer in the bland, traditional sense. Add this one to your favorites list.

Yields2 Servings

Seasoned Potatoe Cubes
 3 lbs small red potatoes
 1 cup fresh shredded parmesan
 2 tbsp oregano
 2 tbsp basil
 1 tsp onion powder
 1 tbsp lawry's seasoned salt
 2 tbsp olive oil
Honey Dijon Walnut Salmon
 ½ cup raw walnuts
 ½ tbsp honey
 ½ tbsp dijon mustard
 2 6 oz salmon filets

Start with the potatoes as they will take longer. Preheat oven to 375 degrees.

Cut potatoes in to cubes and place in a gallon ziploc bag.

Add all other ingredients to bag, seal and shake around ingredients.

Dump contents on to an aluminum foil lined baking sheet and place in the oven. Cook approximately 1 hour or until golden brown and crispy.

While potatoes are cooking pulse the walnuts in a food processor. Spray an aluminum foil lined baking sheet with cooking spray.

Mix together the honey and mustard in a small bowl. Lightly brush the mixture on top of the salmon filets.

Press the mustard-topped salmon into the walnuts. Place on the baking sheet.

Bake for 10-15 minutes, depending on the thickness of your salmon.
